Ingredients:
1x Butternut Squash
1 packet mushrooms (any)
1 can coconut milk
1 can chopped tomatoes
4 teaspoons turmeric
2 teaspoons cayenne pepper
salt and pepper
4 cloves garlic
4 tablespoons tomato puree
Wholewheat noodles
Method:
Steam butternut squash for 15 mins.
Heat tomato puree, garlic and spices till boiling.
Add chopped toms, coconut milk, mushrooms and season to taste and cook for 40 mins.
Add chickpeas and cook for further 10 mins.
Serve with wholewheat noodles or brown rice, quinoa...
