Yep I'm a bit of a pancake addict at the moment but here's a new recipe I tried and think they're my most successful in terms of texture and taste!!
Ingredients:-
1/4 cup buckwheat flour
1/3 teaspoon baking powder
2 eggs
2 tablespoons vanilla protein powder
small handful oats
1/4 cup almond milk
1 teaspoon honey
1 teaspoon cinnamon
Method:-
Put all ingredients in a blender
Heat a little coconut oil in a pan
Pop a few spoonfuls of mix into the pan and flip when pancake starts to set
Add toppings of your choice - I used desiccated coconut, blueberries, cinnamon and a drizzle of honey
